Parerea mea. Pentru ca fotografiile au fost facute in cele mai nasoale conditii posibile (lipsa lumina, ora tarzie etc), din pacate nu arata nici pe aproape la fel de bine pe cat de bune au fost. Excelente pentru o seara cu prietenii (:* pentru ei), sau un meci de orice fel.<br />

Turnam faina intr-un vas, facem o gaura la mijloc, maruntim drojdia, punem zaharul si turnam peste laptele caldut. Lasam 15 minute sa se umfle, apoi framantam cu restul ingredientelor. Lasam 1 ora la dospit, apoi intindem pe blatul de lucru presarat cu faina. Impaturam in felul urmator:<br />

Intre timp morcovii, telina, ceapa se toaca cubulete,
leurda se taie marunt. Cand carnea si-a schimbat culoarea se adauga legumele(mai putin
rosiile), crenguta de rozmarin, sare, piper si paharul de vin.<br />
Se lasa pe foc mediu cam 10 min. Se adauga rosiile, mancarea trebuie sa
fiarba cca. 30 min. </span></div>

<em>Humusul este o mancare foarte populara in tot Orientul Apropiat, asta include si Israelul, Iordania, chiar si Armenia sau Iranul. Totusi, este o mancare tipic arabeasca (mai ales a celor din zona Orientului Apropiat – Liban, Siria, Israel).<br /> Prima mentionare clara a humusului este din secolul XVIII in Damasc.<br /> Legenda spune ca liderul arab Saladin (cel care s-a batut cu Richard Inima de Leu) ar fi fost inventatorul humusului</em><br />
<em>Statutul social al unei familii se putea masura in vechime dupa calitatea si vechimea retetei de humus pe care o avea. Familiile religioase sunt renumite pentru cantitatea de usturoi din humus; in felul acesta se spune ca se asigura si o distanta respectabila intre baieti si fete.<br /> Desi mentiuni ale humusului sunt relativ recente, ingredientele sunt folosite de mii de ani: nautul e cultivat de peste 6000 ani in Palestina si Mesopotamia, pasta de sesam cam din aceeasi perioada de Babilon si asirieni, la fel si maslinele cultivate in Siria si Palestina tot prin 4000 i.Hr. (Biblia mentioneaza uleiul de masline destul de des). Usturoiul este folosit de babiloneni,doar lamaile apar mai tarziu, candva dupa Hristos provenind din India.<br /> Humus in limba araba inseamna “naut”</em><br />
<strong>Nautul:</strong> Nu contine colesterol sau grasimi saturate, fiind o sursa puternica de proteine, importanta in special intr-o dieta vegetariana . Nautul are si un efect preventiv in cazul acumularii de colesterol in vasele de sange. In plus, regleaza nivelul glicemiei in sange.<br />
<em><strong>Tahini:</strong> Sosul de susan este bogat in grasimi si calorii. Beneficiile sale vin din tipul grasimilor continute, majoritatea nesaturate, care au un efect pozitiv asupra organismului. Asemenea nautului, pasta de susan este bogata in proteine si o sursa foarte buna de calciu.</em><br />
<em><strong>Usturoi si zeama de lamaie:</strong> Cele doua alimente sunt bogate in antioxidanti, care inhiba actiunea oxidativa a radicalilor liberi asupra celulelor organismului. Atat </em><em>usturoiul</em><em>, cat si sucul de lamaie</em><em>, intaresc sistemul imunitar si ajuta corpul sa lupte eficient impotriva bacteriilor si a virusurilor.</em><br />

<em>Eu am incercat de cateva ori aceasta minunatie preparand-o dupa retete gasite pe net, insa nu pot sa spun ca m-a entuziasmat foarte mult. Abia reuseam sa inghit pasta, mi se parea inecacioasa si ciudata. Un timp nu am mai incercat. Acum insa am gasit reteta potrivita pentru mine, imi place si cu siguranta o sa o repet mult mai des. Ba mai mult, toata familia a mancat cu placere, desi ei sunt cei mai mari critici ai mei in materie gourmet, deoarece sunt fani carne si ma caracterizeaza drept mancatoare de iarba si hrana de pui (cereale :) ) Incet, incet ii voi transforma in oameni sanatosi ;)). </em><br />

Cand au fiert, le strecuram, le pasam sau blenduim, subtiem piureul dupa gust si plac cu zeama in care au fiert legumele, turnam sucul de rosii si mai fierbem 5 min. Eu am fiert separat orezul si l-am adaugat la final cu uleiul, tarhonul si patrunjelul maruntit. Ei bine …nu am o explicatie plauzibila pentru acest fapt, poate doar simple motive mici mai mult sau mai putin dependente de mine. Intre timp e toamna, am avut o perioada ploioasa in care daca as fi putut sa stau suspendata in plafon cu capul in jos, as fi facut-o cu placere. Am trecut si prin diverse stari in luna septembrie, de la exaltarea de la sfarsitul vacantei la emotii legate de inceputul gradinitei, de la disperare ca ploaia si frigul nu se mai opreau la epuizare fizica si psihica, apoi usoara disperare de necontrolat. </span><span id="yui_3_7_2_1_1381325307559_2388" lang="DE" style="font-size: 12pt; line-height: 115%;">Astfel e greu sa se mai gandeasca omul la mancare. Dar eu m-am gandit. O da! Mai putin la ce voi pune efectiv pe masa sau ce ingrediente voi folosi. Eu sunt un consumator emotional, adesea </span><span id="yui_3_7_2_1_1381325307559_2389" lang="DE" style="color: black; font-size: 12pt; line-height: 115%;">trist, nemultumit sau plictisit, cu un nivel redus de energie pe vreme rea, anxios si in acele momente tind sa evit prietenii si familia. </span><span id="yui_3_7_2_1_1381325307559_2390" style="color: black; font-size: 12pt; line-height: 115%;">Ei bine toate acestea ating punctul culminant cand ma arunc asupra „frigiderului“ si mananc de parca s-ar sfarsi lumea. Ce e drept nu prea consum carne, dar se dovedeste faptul ca sunt infinite alte alimente care desi individual sunt considerate sanatoase, consumate in exces si combinat…. ei bine, sa spunem doar ca forma de gogoasa infuriata imprumutata in ultimul timp nu se datoreaza doar statului pe scaun 10-12 ore pe zi. Astfel mesele mele de o luna incoace sunt luate la nimereala si combinate cum nu se poate mai prost. Dat fiind faptul ca privind spre genele din familie se pare ca am puternice tendinte de ingrasare… ei bine, viitorul nu suna bine.</span></div>

<span id="yui_3_7_2_1_1381325307559_2391" style="color: black; font-size: 12pt; line-height: 115%;">Ce am consumat in ultimul timp: timp de o saptamana in fiecare dimineata am baut un smoothie de sfecla cu castravete, apoi inca o saptamana de smoothie cu morcov+mar sau morcov + portocala. Pe la ora 11.00 am mai consumat un iaurt slab cu cereale, iar pana sa plec acasa de la servici am mancat doar legume si fructe. Pana aici toate bune si frumoase, dar imediat ajunsa acasa am gatit si am mancat diverse combinatii de legume fierte, orez, paste (mai multe decat era nevoie), peste si alte cele. Nici acest lucru nu ar fi fost asa dezastruos dat fiind faptul ca nu prea contineau carne, daca nu mi s-ar fi facut mereu pofta de ceva dulce si daca nu as fi cedat poftelor aruncandu-ma ba in inghetata, ciocolata neagra, biscuiti, prajituri… Dupa masa de obicei mai avem program pana seara pe la 8-9-10, astfel dupa aceea am mai rontait cate ceva ca deh. Asa am preluat o forma mai rotunda decat mi-as dori si daca nu as fi oricum inalta, ar fi mai usor sa ma sara cineva decat sa ma ocoleasca. Unde mai pui ca miscare nu am facut aproape deloc in ultima luna simtindu-ma mai mereu ametita, obosita si fara vlaga.</span></div>

Am taiat rosiile bucati, apoi le-am mixat impreuna cu condimentele macinate si usturoiul.<br />
Am topit untul, am calit putin crevetii in el, apoi am adugat vinul si dupa 3 minute de fiert si sosul de rosii obtinut inainte. Am lasat sa mai fiarba pe foc f mic 10 min. Cand au fiert taiteii (se fierb super repede), i-am strecurat si adaugat la sosul cu creveti. Tocam ceapa, o calim, adaugam carnea si mai calim un pic. Ardeiul si rosia le mixam cu mixerul de legume, apoi
adaugam la carnea de pui, 1-2 l-te de paprika, sare si piper si o cana mare cu
apa.<br />2. Lasam sa fiarba 15-20 de minute.<br />3. Dupa ce a fiert

<span style="font-family: Times,"Times New Roman",serif;">Curatam si razuim in legumele. In trei linguri de ulei calim ceapa tocata impreuna cu morcovul si telina. Dovleceii ii lasam deoparte deoarece ii vom adauga mai tarziu. Turnam peste legume 1, 5-2 L apa. Cand legumele sunt aproape fierte adaugam dovleceii (dat in clocot). Condimentam cu sare. <br /><br />Continuam fierberea inca 15 minute si luam vasul de pe foc. Intr-un castron amestecam iaurtul si galbenusul adaugam si 4-5 linguri din ciorba (pentru a dilua smantana), omogenizam bine si turnam amestecul in ciorba. Presaram cu patrunjel verde. </span></div>

Noi nu mancam de fel drob, nici miel sau ied. Cel putin pana acum nu am facut-o. De aceasta data insa am cumparat o bucatica de drob din comert pentru a mai diversifica micul dejun si am constatat ca prichindelul familiei nu se poate opri din mancat. Totusi are sub 3 ani si eu incerc sa nu ii dau carne mai ales grasa de porc sau mancaruri foarte grele, asa ca am adoptat reteta Laurei Sava si am facut si eu drob. Foarte bun.<br />

Ingrediente:<br />

- 500 g. piept de pui<br />
- 500 g. ficatei de pui<br />
- 50 ml.
vin alb <br />
- 2 cepe potrivite<br />
- 2 morcovi<br />
- 1 felie de paine (mai veche)
sau 2 linguri pesmet<br />
- 3 oua crude<br />
- sare, piper <br />
- 4 oua fierte
tari<br />
- frunze de patrunjel sau marar, tocate<br />
<br />
Se fierbe carnea in apa cu sare, se spumeaza se adauga ceapa si
morcovii taiati bucati mari. Se lasa sa fiarba bine. <br />
Separat,
se pun ficateii intr-o tigaie cu 3, 4 linguri ulei, la foc foarte mic,
acoperiti; se adauga vinul si se lasa pe foc cca. 10-15 minute. Sosul rezultat, va da savoare drobului . Cand
carnea si ficatul sint gata, se lasa sa se racoreasca si se dau prin masina de
tocat, impreuna cu ceapa si morcovul.<br />
Se amesteca bine sa se omogenizeze, se
adauga ouale crude, batute bine, pesmetul sau painea inmuiata in lapte. Daca folositi paine, dati-o prin masina odata cu carnea si legumele. Se
adauga sare si piper dupa gust si verdeata tocata fin.<br />
Se unge o tava de chec
cu ulei si se tapeteaza cu hartie de copt.<br />
Se adauga jumatate din
umplutura in tava, se aseaza ouale fierte, intregi si se
acopera cu restul de compozitie. Se pune drobul in cuptorul preincalzit, la foc
potrivit (180 grade C) pentru cca. 35 de minute. Se lasa apoi sa se racoreasca,

Se taie puiul bucati si se pune la fiert in apa rece cu morcovul si ceapa
taiate cubulete si telina
bucati mari, ardeiul intreg , si fierbem impreuna cu un putina sare si
lingura de legume timp de 15 minute , spumand supa atunci cand este cazul.
Dupa 15 minute adaugam orezul si tijele de la cele 2 fire de telina taiate
cubulete mici si
lasam sa fiarba acoperit si la foc mic inca 20 de minute. Dupa aceea scoatem
carnea , telina radacina si ardeiul si dezosam carnea si o taiem bucatele
mici. Jumatate din ardeiul rosu il pun inapoi
taiat cubulete mici pentru ca da un aspect placut ciorbei.<br />
Separat intr-un bol amestecam 300 ml de smantana cu 2 sau 3 galbenusuri
si adaugam peste ciorba clocotita data pe minim, potrivim dupa gust cu sare si
piper si acrim la fel in functie de preferinte sau cu bors sau cu zeama de la
muraturi.<br />

Titlul cam zice tot. Schnitzele de soia se fac exact ca cele normale, eu inainte fierb bucatile de soia in apa cu sare, usturoi si foaie de dafin. Apoi le storc bine, le dau prin faina si ou si le prajesc in ulei.<br />

Pastele le-am fiert putin de tot, pentru ca se fierb rapid, apoi le-am strecurat. Am calit 2 catei de usturoi, am adaugat 3 rosii uscate din ulei de masline taiate cubulete, am tavalit putin si spaghetele in aceasta compozitie si voila. Am cumparat niste coaste de porc cu carne si ceva grasime pe ele, asa ca le-am pus repede in baitz cu sare, piper, mustar si ulei de masline. Le-am lasat asa o jumatate de ora in care am pregatit un rizotto cu legume si fasole boabe.<br />

Am sarat si piperat pestele si l-am asezat pe o tava tapetata. Am curatat si ras cei 3 cartofi, i-am stors si i-am amestecat cu 2 lg de pesmet, usturoiul si patrunjelul tocate marunt. Am asezat peste peste cartofii intr-un strat gros, am stropit bine cu ulei de masline, se poate stoarce si o jumatate de lamaie, si am dat tava la cuptorul incins pentru 15 minute. Am ramas datoare cu un numar mare de postari pe care sper sa le recuperez in timp. Deocamdata o sa postez cate ceva cum imi permite timpul.<br />

Acreasta mancarica este una foarte gustoasa si nici nu este o reteta foarte laborioasa.<br />

Avem nevoie de:<br />
1 piept de pui<br />
1 ceapa mare<br />
250 ml lapte de cocos<br />
3 catei de usturoi<br />
250 ml supa de legume<br />
2 lg sos de soia<br />
2 l-te praf de curry<br />
sare, piper, ulei de masline<br />
<br />Taiem pieptul cubulete, apoi il prajim in 2 lg de ulei de masline. Taiem ceapa julien si usturoiul rondele subtiri. Separat calim ceapa si usturoiul in 2 lg de ulei de maslinem adaugam praful de curry, laptele de cocos si supa, mai lasam sa dea in clocot cateva minute, apoi adaugam carnea cubulete si lasam sa fiarba putin pana se ingroasa sosul. Condimentam si e gata.<br />

300 gr cartofi<br />
600 gr carne de vita<br />
1 ceapa mare<br />
1/2 ardei iute<br />
1 l-ta boia iute<br />

Incingem cca 3 lg de ulei intr-o cratita si prajim ceapa tocata si carnea de vita taiata cubulete, turnam 200 ml supa (sau apa calda) si lasam la fiert la foc mic. Dupa ce a fiert carnea, adaugam peste putina faina , boiaua si chimenul. (Pentru cine nu e fan seminte de chimen care raman intre dinti, gasim si praf in comert.)<br />
Taiem ardeiul bucatele mici si il adaugam la tocana, apoi cartofii taiati cubulete, potrivim de sare si mai lasam sa fiarba 15 minute.<br />

Pentru Spätzle:<br />

320 gr faina alba 00<br />
150 ml apa calduta<br />
2 oua <br />
sare<br />
<br />Punem faina intr-un castron impreuna cu sarea, ouale si apa calduta si framantam pana obtinem un aluat omogen. Izbim aluatul apoi de planseta pana incepe sa faca basici, pe urma il lasam sa se odihneasca cca 1 ora. Dupa aceea rupem o bucata, o rulam pe planseta de lucru pana obtinem un sul cu diametrul de cca 1,5 cm. Taiem sulul in bucatele de 1,5 cm, la fel procedam cu restul aluatului. Punem apa la fiert, cand clocoteste micsoram flacara, punem din galuste in apa cca 1/3 si le lasam sa fiarba 2 minute. Le scoatem in strecuratoare. Procedam la fel si cu restul galustelor.<br />

Spalam crevetii, ii zvantam, ii taiem rondele, apoi ii calim in tigaie cu uleiul, patrunjelul tocat, usturoiul pisat si ardeiul cubulete. Turnam un polonic de apa peste si lasam 2 minute. Tocam rosiile cubulete, apoi le adaugam in tigaie si potrivim de sare si piper.Mai lasam cateva minute, apoi stingem focul.<br />

Fierbem spaghetele al dente, le scurgem, apoi le amestecam cu sosul de creveti. Spun la plural pentru ca una este salata normala de vinete, iar cealalta este una aproape raw, adica vinetele sunt coapte, dar maioneza este raw. Le-am facut impreuna, dar au iesit ambele atat de bune, incat nu se deosebeau nici prin aspect, nici prin gust.<br />

Dupa ce vinetele sunt coapte, curatate si scurse, le maruntesc bine de tot cu tocatorul special. Toc marunt o ceapa, fac o maioneza dintr-un galbenus, o lingurita de mustar si ulei, apoi amestec totul bine cu miscari rapide. La final adaug o lingura de smantana si potrivesc de sare.<br />

Am hidratat o canita de caju si 100 gr de seminte de floarea soarelui. Le-am prelucrat in blender scurse, am adaugat 100 ml apa si zeama de la o jumatate de lamaie.
